Oatmeal Whoopie Pie Recipe

Ingredients
COOKIES
- 1.5c. McCann’s® Quick Cooking Rolled Irish Oats
- 2⁄3c. unsalted butter
- ½c. brown sugar
- ¼c. granulated sugar
- 1medium egg
- 2tsp. Spice Islands® Pure Vanilla Extract
- ½tbsp. Grandma’s Molasses
- ¾c. all-purpose flour
- ½tsp. Clabber Girl Baking Soda
- ½tsp. salt
- ¾tsp. Spice Islands® Ground Saigon Cinnamon
- ¼tsp. Spice Islands® Ground Cloves
CREAM FILLING
- 1⁄3c. unsalted butter
- 1.5c. powdered sugar
- 3tbsp. heavy cream
- 1tsp. Spice Islands® Pure Vanilla Extract
- 1pinch salt

Cookies
- Preheat oven to 375°F. Line a large baking sheet with parchment paper.
- Cream the butter and sugars together in a stand mixer with paddle attachment for 2 minutes.
- Add in the egg, vanilla, and molasses to the butter mixture.
- In a separate bowl, whisk the flour, baking soda, salt, cinnamon, cloves, and oats together.
- Add in the dry to the wet ingredients, mix to combine. Using a cookie scoop, drop the dough onto the sheet tray.
- Bake for 10 minutes, let cool
Cream Filling
- Mix butter for 2 minutes, add in powdered sugar, vanilla and heavy cream, mix to combine.
- Spread cream filling between two cookies and enjoy!
